Tackled Three at Once
I wanted to make the Pioneer Woman's Simple, Perfect Enchiladas. With that I thought that the
Pico De Gallo and Guacamole would partner well. It was very pleasing, anything that has lot's of cilantro in it I love. The Enchiladas were the most time consuming thing I have ever done. They were so good but I will only make these like once a year. Here we go.

Ingredients are
yellow or red onion
Roma tomatoes
cilantro
jalapenos
lime
salt
Start out cutting the onions, tomatoes, cilantro, and jalapenos.
then squeeze the lime and sprinkle with salt. so easy
The ingredients for the Guacamole
Avocados and Pico De Gallo
just take about three scoops of the pico and add it to the mashed up avocados
and you have Guacamole
It looks a little odd, but it tasted very good.
I made homemade chips out of tortillas shells by frying them till crisp also cut them with pizza cutter before
frying
Now for the whole Enchilada
I don't like to make the pages to big, I want to share what I am cooking but, want people to by her cookbook, and try the recipe's.
I had a laps when I forgot to take a picture of the ingredients. Sorry about that
The ingredients are canola oil
all purpose flour
enchilada sauce
chicken broth
salt
black pepper
cilantro
ground beef
onion
diced green chillies
corn tortillas(I only use flour)
black olives(I had to omit)
green onions
cheddar cheese
First step is to make the sauce
then prepare the meat
fry the tortillas
then once these three things are done you assemble
then cook and eat. YUM

Marlboro Man's Favorite Sandwich with a Side of Onion Straw's
This was one of the best recipe's in this cookbook. I chose to also make the onion straws with it and they are a little time consuming. Needless to say there were no left overs.
Ingredients for Sandwich
onion
butter(Lot's)
cube steak
season salt
lemon pepper
black pepper
Worcestershire sauce
Tabasco
french or deli rolls
Start slicing the onions and once they are sliced add butter to the skillet and add onions.
once the onions are soft remove from the stove.
cut your cube steak in one inch slices and put in skillet. add the seasonings and cook till done.
once the meat is finished add onions and serve on rolls of your choice. She recommends putting a little juice on the bun to get good flavor and it is wonderful and crowd pleasing.
The Onion Straws
Ingredients are
Onions
buttermilk
all purpose flour
salt
pepper
cayenne
canola oil

cut into very thin slices and put in large dish for soaking.
pour the buttermilk on them and let them soak for hour.
while they soak mix all dry ingredients.
fry them up and serve.

Chocolate sheet cake - Pioneer Woman
I have been so busy that I have not posted in forever. We have moved and put the house up for sale so I have been so busy. I made another Pioneer Woman recipe, Chocolate sheet cake, and oh my does it taste good and oh does it ever make a ton. If you ever need to make a big amount of something for a gathering or family reunion, make this. One of the easiest things I have made.
Ingredients are:
flour
sugar
salt
buttermilk
eggs
vanilla
baking soda
butter
cocoa powder
milk
powdered sugar

I mixed all the dry ingredients together and then the wet together.
once you mix them seperate then combine and pour in baking sheet, a big baking sheet pan
When the cake comes out the oven pour icing on cake right then
You will impress anyone that tries this cake.

Simple, Perfect Chili for a cold snowy day.
I rushed out Friday afternoon trying to beat the winter storm. Was not lucky, half way thru the store it was just a snowing. We get to the front door of the store and make a mad dash to get the groceries in and get out of the wet slush that is falling. Made it home safe and pretty dry. I will be away from home for a few days so I wanted to make Adam something he could eat on while I was gone. Chili is not my favorite thing to eat, I HATE BEANS!!!!!!!!!!!!! but I only added one can of pintos to this chili.
Ingredients are
garlic
oregano
cumin
cayenne pepper
chili powder
ground beef
tomato sauce
salt
masa(corn flour)
optional: are pinto beans, kidney beans,jalapeno,diced tomato
first get ground beef and garlic cooking
then in a large pot I put the tomato sauce and all the spices
then once the meat cooked I added it to the sauce and spices and you are supposed to let it simmer for a hour but my mixture was too thick for that so I added the tomatoes and a little water to the pot and let it cook at once.

now it is simmering for hour and it smells great!

French Breakfast Puffs OH MY!
I was still in a cooking mood so I decided to make the Pioneer Woman french breakfast puffs. I am not much on sweets, but my husband ate them up!
The ingredients are:
flour
baking powder
salt
nutmeg
sugar
shortening
eggs
milk
butter
sugar
cinnamon
cream the sugar and shorting
then add the milk and the flour and nutmeg
then fill 2/3 of the way and bake at 350
once they cool for a few minutes roll in butter and then in sugar and cinn
